All winter long I lounged around in perfect comfort swaddled in my nice stretchy yoga pants.
FYI, I don’t actually ‘do’ yoga, but I love the garb.
Anyway, a couple of weeks ago we had a heat wave, a tropical heat wave……sorry I couldn’t help myself.
During said heat wave, I did what any normal person would do. I went to the shelf in my closet that holds all those cute summer shorts.
I slipped a pair on and….
I looked just like this in them.
From the side, the view wasn’t any better.
Isn’t that called something to do with muffins? Mmmmmmmmm, muffins!!!
So I decided a winter of munching anything I wanted to would have to come to an end, either that, or I’d need to run out and invest in a new wardrobe.
I hate to diet, but I do love oatmeal. I really love steel-cut oatmeal. My friend Oprah told me about it years ago, and I had almost forgotten about it. A bowl of filling oatmeal is only about 150 calories, and it really stays with you. Most of the time I’m not even hungry for lunch. That doesn’t mean I don’t eat lunch though. I love lunch, next to dinner it’s my favorite meal.
It’s so easy to make.
Add 1/4 cup of oats to a sauce pan.
Pour in 1-1/2 cups of water.
This is my secret weapon.
2 tablespoons of Coffee-mate, Cafe Latte poured in turns plain old oatmeal into creamy deliciousness. Sure some butter, cream and sugar would be great too, but that’s how I got myself in this situation in the first place.
Bring it to a boil and reduce to a simmer for 10 minutes.
It really is good, and you’ll hardly miss the french toast and crepes.
OK, that last part wasn’t true, but you’ll be able to fit into your shorts again.
