Homemade Butter!!!!

 

This homemade butter is an epiphany! It will make you love butter more than you already do. It made me love butter more than I did before and I didn’t think that was possible. It’s easy to make. Takes less than ten minutes beginning to end, and it’s a great cooking project to do with the kids. I told you I wanted to get back to the way things were done, but you won’t find a churn in my kitchen.

Let’s get started!
This is what you’ll need.

That’s it! Heavy whipping cream, salt and your food processor. Add 1 cup of heavy whipping cream and between 1/2 to 1 whole teaspoon of Kosher salt, table salt’s fine, I just like the way kosher tastes. When you’re in the final stage you can always taste and add more salt if needed so start with 1/4 teaspoon.

Just in case you’re wondering why my salt has little black specks in it, it’s pepper. I don’t intentionally have it that way, it’s just my salt and pepper sit side by side and sometimes when I’m in a cooking frenzy they tend to migrate from bowl to bowl. I don’t mind, a little pepper never hurt anyone.


There they are, those tiny black pieces of pepper. My poor children don’t know any better, they think all butter should have a little pepper in it.

OK, back to butter making. Blitz the cream for several minutes

The cream goes through basically three stages on it’s way to making butter. First cream, duh, second whipped cream then the whipped cream “breaks” and the butter milk separates from the butter fat. Butter fat,yum! You will also notice the level of the cream inside can clearly be seen from the outside.


See how the level has begun to drop and the line has gotten jagged? You’re almost there. Time for a quick scrape down of the sides. Notice that it’s looks like butter, but the butter milk hasn’t separated from the butter fat yet. Mmmm, butter fat.

Continue blitzing until you see watery butter milk in the bowl. It can get a little loud and rumble-ie as the butter “breaks” away from the butter milk. Also, notice how the level has dropped.

There it is, butter with butter milk.

Pour off the butter milk. Save it if you like, it is wonderful in pancakes and homemade bread.

There it is! Fresh, creamy, homemade butter.

Put the butter on a cheese cloth, a retired wash cloth or dish towel. Can you believe this much butter came from one cup of cream?

Give it a good squeeze.


It’s SOOOO Good!

    I made your bread and it was delicious! This butter looks great but I was wondering if there is a healthier substitute for the heavy whipping cream?

    I’m so glad you enjoyed your homemade bread. I don’t know of a healthier way to make real butter. You need the heavy whipping cream so you’ll end up with enough butter fat to make butter.The good news is, it tastes so good, a little goes a long way.

    I just made the butter!! OMG! I’ve never made butter! Thought I couldn’t because I didn’t have a churn…and I actually can’t say I ever thought much more about it than that. It took me FIVE minutes!! Amazing! And I’ve got the bread dough resting on the stove right now. I LOVE the pictures and you make it all seem so easy and doable! SOO glad I happened upon our blog!

    AHH! I just made this! It turned out SO well, and I don’t think I’ve EVER been this excited about something I made! It’s just as butter should be! I’m sure my fiance didn’t appreciate the noise at 8am on the only day he gets to sleep in, but I’m so proud of it, it’s totally worth it!

    I have stumbled upon you and so grateful that I have! WOW! Baking at the simplistic level…who’d a thunk it??? I wish I had your pics & simple directions when I was a young housewife! (hmmm but then my first husband might have stuck around….not so good! hahahaha!)

    When my mother made bread, it always seemed so complicated and longgggg! ha!

    Sometimes I forget about my whip cream frosting in the stand mixer and it turns into sweet butter, so I just add cinnamon and act like I did it on purpose. Now you made me want to actually make some on purpose. I never would have thought of using the food processor.
