This focacci bread recipe is so versatile. I make it all the time and add different topping combinations.
If you double the recipe, it makes two beautiful loaves of white bread your family is sure to love.
Start with my basic Focacci recipe and let your imagination take over. You’ll find the original recipe here.
There are step by step photos to follow when you click the link above, but here’s what you’ll need:
1 1/3 cup warm water
2 teaspoons sugar
1 packet of yeast (2 teaspoons)
3 3/4 cups of all-purpose flour ( I usually add 3 1/2 cups to the mixer and add the last 1/4 cup while hand kneading if needed)
1 teaspoon kosher salt
1 large onion
feta cheese to taste
parmesan cheese to taste
olive oil
While the dough is rising, sauté 1 large onion in 1 tablespoon olive oil until it’s caramelized.
This recipe will give you 2 good size rounds of dough. I made one of the rounds with onion and feta and the other round with the more traditional topping of olive oil and fresh rosemary.
Drizzle olive oil on the dough making sure to fill the divots with oil.
Grab some fresh parmesan cheese,
and some feta. The feta I used has tomato and basil mixed in.
Layer on the caramelized onion followed by the feta and parmesan cheese.
Cook in a preheated oven at 450′ for 5 minutes on the bottom rack, them move to the middle rack for another 5 minutes. If you like your cheese extra toasty, you might want to run it under the broiler for a couple of minutes.

I ended up making it last night. I’d post a photo but all I have is a horrible cell phone photo. My husband finished it off for lunch today. I must tell you, my hubby dipped his in marinara sauce and said it was by far the best bread I’ve ever made. It really was good. The sweet onion flavor was an awesome mix with the tangy feta flavor. Thanks so much for sharing. I will make again (probably tonight! haha!).

I’m so glad it turned out well. It couldn’t be simpler, could it! The combinations are endless, but I have to admit fresh rosemary, kosher salt and olive oil are my favorite toppings.
