Clementine’s are in season and too good to pass up! The sweetness of the fruit is balanced by the acidity of the dressing. It’s addictive!
Here’s what you’ll need:
Heart of Romaine lettuce
Toasted almonds
3 clementines
croutons
3 green onions chopped
Dressing:
2 tablespoons apricot preserves
1 tablespoon white balsamic vinegar
1 tablespoon apple cider vinegar
pinch of kosher salt and ground pepper
1 tablespoon grapeseed oil
To a small mixing bowl add 2 tablespoons of apricot preserves.
Next add the apple cider vinegar, balsamic vinegar, oil, and salt and pepper.
In a large salad bowl add the chopped lettuce, chopped green onions, toasted almonds, peeled and segmented clementines and a few croutons.
Mix the dressing until the ingredients are well incorporated.
Pour on the dressing and toss the salad.
