This pizza is sweet and salty, creamy and crunchy all at the same time. In other words, it’s just about the perfect pizza. Made with crème fraîche instead of a tomato base it’s different in just the right way.
Start with a homemade dough. I used Wolfgang Puck’s famous honey crust he uses at Spago. You’ll find the full recipe here.
Next, get your crème fraîche. It’s super easy to make and only has two ingredients, cream and buttermilk. You’ll find the recipe for making homemade creme fraiche here.
To your crème fraîche add ground pepper, mozzarella and parmesan cheese. Fold until well combined.
Arrange fresh sliced figs, sage and prosciutto ham over the crème fraîche base and sprinkle with a little parmesan cheese. Add a layer of caramelized onions if you like. I love the combination of sweet onion with salty ham.
Run into a preheated oven at ’450 for about 10 minutes or until brown and bubbling.

Homemade Creme Fraiche
Creme Fraiche pizza base
1 cup crème fraîche
1 cup fresh grated mozzarella cheese
1/2 cup fresh grated parmesan cheese
1 teaspoon ground pepper
You’ll also need:
1 medium onion caramelized
5 or so slices prosciutto ham
6 fresh figs sliced
6 or 7 fresh sage leaves
